As 4th generation dairy farmers milk production has been at the heart of our family for 100 years. Ten years ago we felt that conventional milk production was not a positive way of treating the environment and decided to convert to organic production. The crux of this is that we must treat the land and the animals with respect, no chemicals and severely restricted drug use.
The milk in the ice cream is whole milk, which means it comes directly from our own dairy herd with no separation. Some manufacturers will use skimmed milk at this first stage, which is cheaper and contains less fat, and if less fat is used, inevitably more sugar will be used. Ice cream is no different to most products, the flavour comes from fat, sugar and in other products salt.
Whole organic milk is the main component of our ice cream making up 60% of the finished product. We manage the land, we look after and milk the cows and we make the ice cream. Next time we’ll look at local double cream.
