Ice cream is a product which has been around for a thousand years and in that time people have been making a frozen dessert and calling it ice cream. But what is it really?
Ice cream is essentially a sweet frozen dessert, which is a combination of a number of individual components gelled together by heating up and then freezing down. If any part of the process is not carried out properly or breaks down the product falls apart.
It is also a combination of sugar and fat, and the secret is getting that combination balanced!
Here at Woodlands our fat is whole milk and double cream and our main sugar is cane. These two elements are the key to quality, however, these are also the areas where you can cut corners by using cheap fat and cheap sugar. Ice cream is not always what you think it is, if it’s cheap there is a reason, before buying always ask yourself, why is it so cheap and what’s in it? Next time I’ll go through how we’ve been making our ice cream the same way for over 25 years.
